		<description>If you're a Kitchen Nightmares fan (the BBC version with potty-mouth Gordon) you might have seen the Fenwick Arms episode.  Gordon shows the chef how to make real gravy with roasted vegetables and stock instead of flour.  I know it's gravy, and it's hardly low-cal, but this method has to be way healthier than adding flour.

Simply roast some carrots, onions, and celery with herbs and seasoning alongside your bird.  When the bird comes out, you basically puree the roasted veg along with the pan drippings (or some pan drippings) and add stock until you have your idea of lovely gravy.  Season and smother that meat.  (Don't take my word for it, though.  Google around a bit.)</description>
